Beignet's
Brought a box of Beignet Mix back with me from New Orleans.
We cooked them outside to minimize the mess.
They cooked up nice and fluffy.
And they were Yummy!! And tasted just like they did in New Orleans.
Unusual & Funny

Always Fun to go to the Lineman Rodeo.
Takes a lot of skill to be a Lineman, let alone compete in a Rodeo that magnifies their abilities as Lineman.
This year was Brrrr COLD! We bought Erin a chair and blanket.
Also took a Ride up to Pikes Peak....we could only go to mile marker 13, but it was a Great ride.
So Beautiful up there
We stayed at the Broadmore Resort. Because this is where the conference was held.
Quite the Fancy Shmancy Hotel.
